Caminando entre recuerdos
En los viñedos la planta de vid inverna después de la cosecha,cuando entra el invierno,por varios meses.Luego viene la poda,en agosto o septiembre,podadores cantan antiguas canciones subidos en los molles(utilizados como sostén de las plantas de vid)podando la planta de mollar o moscatel negro,dejando sarmientos largos,podan también los viñedos en espaldera de quebranta, prieta o uvina,poda corta,pocas yemas,sarmientos cortos.Todos felices por la llegada de la primavera y el inicio de una nueva etapa en el viñedo,se bebe vino o cachina(vino seco) de quebranta,de mollar,de prieta o de uvina,luego hay que machacar el viñedo(agregar abundante agua por los surcos para inducir el brotamiento de los sarmientos),luego se ablanda y se abona el suelo con arados jalados por caballos o por yuntas(2 bueyes),luego viene la floración,el cuajado,el envero,la maduración,etapas bellas por las que pasa un viñedo antes de la vendimia(cosecha) en marzo o abril,terminando el verano y empezando el otoño.
En la bodega están los lagares de pisa y las puntayas(donde cae el jugo de la uva),se empieza la pisa de uvas en la madrugada con una cuadrilla de hombres al mando de un guía que con un tambor marca el paso del pisado,se para para tomar un gran desayuno y luego se continúa,todo el tiempo acompañado de un vino o cachina para reponer fuerzas,en el alambique de cobre se destila el pisco,se mide el grado alcohólico en la antigua escala cartier,la leña de níspero es usado como el mejor combustible,el chicharrón es el pisco recién destilado,en las pipas y toneles de roble se fermenta y también se crían los vinos,las botijas de barro es lo mejor para fermentar los mostos,también se cría la cachina(vino seco) o el vino manzanilla(mistela) por meses o años,los arroberos y cuartillas de bronce sirven para medir las cantidades,las bombas de bronce manuales se utilizan para bombear los mostos de las puntayas a los recipientes de fermentación.
Finalmente los vinos y piscos embotellados se lacran con un lacre a base de colofonia,goma laca y trementina.
